Lentil sprouts are an excellent source of carbohydrates, protein, fibre, iron, calcium, phosphorus, potassium and vitamins (A, B1, B2, B3, B6, B12, C, E).
They help to regulate blood sugar and cholesterol levels. As a food that is very low in saturated fat, lentil sprouts help to prevent arteriosclerosis. They can be eaten raw but are particularly tasty and easy to digest when steamed or used in stir fries.
